Our vegan nut cheese style spreads are made with organic nuts and seeds of the highest quality. These are raw fermented products that provide enhanced nutrition from the simple processes of sprouting and fermentation.
Based on research from pioneers involved in sprouting and fermentation, such as Ann Wigmore, the nutritional content of nuts and seeds in a sprouted and fermented form can increase by 600% (or six times more). This means that the nutritional content normally locked inside a food by enzyme inhibitors is now available for the body to fully absorb. This becomes possible as a result of enzyme inhibitors being removed from the process of soaking and sprouting, whereas fermentation will reduce the carbon chains of these foods and make them much easier to digest. Fermented foods are otherwise called pre-digested foods, meaning your body doesn’t have to work as hard to get the mineral content available in them.
Even though fermented foods are normally acidic, they are considered alkaline when ingested due to the large amounts of minerals that become available. Mind you, not all fermented foods can qualify in this category. Foods that are fermented in vinegar (except for raw unpausterized apple cider vinegar, which is considered alkaline), remain acidic even when ingested. Furthermore, regular vinegar and sugar feed yeasts and candida. So, try to look for foods fermented by what is called ‘wild fermentation’ or with some sea salt. Please note that although nuts and seeds are high in fat, in raw form they retain the enzyme lipase which is responsible for fat digestion. Enzymes are destroyed when nuts and seeds are roasted or cooked, and thus becoming more difficult to digest. What's normally called good fats means that nuts and seeds have the proper enzymes for digestion of fats and your body doesn’t need to use its own enzyme reserves, which would otherwise make you slightly fatigued or expressed by feeling sleepy. Note: There are many vegan cheese recipes available on media nowadays that incorporate nutritional yeast. We at Nut Tree Cafe do not believe in nutritional yeast and are of the opinion that this ingredient may not be good for the health of many people. Our cheeses do not include yeast, nor do the breads we serve or anything else in store. Even though nutritional yeast in known to be a good source of Vitamin B12, which is rare to find for vegans, sprouts and wheatgrass also provide Vitamin B12, so don't be limited and feel that you have to use products with nutritional yeast to get your B12.
Nut Cheese Style Spreads
Almond CheeseThis delicious vegan cheese spread is made with unpasteurized Spanish almonds. Almonds are known for a more complete nutritional spectrum of minerals than other nuts. They are commonly considered a special food for the balanced nutrition they provide. Although other nut cheese style spreads may have more crowd pleasing flavours, none beats the nutritional content of almonds.

Cashew CheeseThis seems to be the most popular of the fermented cheese style spreads, although my second favourite. It’s a bit more sour than Brazil Nut cheese and perhaps closer to the real cheese flavour. The first time I tried it, I couldn’t believe it was made out of cashews and had no dairy in it. I had to ask a few times for confirmation as I was indulging in my first slice of toast with cashew cheese, and busy making sure it reached my stomach really fast. Needless to say, it has became a beloved food in our family ever since. Many of our easy dinners consist of toast and cheese with garden salads and olive oil, baked potatoes and baked, garden-picked seasonal squash. I have to reveal the secret, a combination of baked or steamed squash and cashew cheese is just too good to miss!

Brazil Nut CheeseThe sweetness of Brazil Nuts is truly brought to the forefront in this fermented cheese style spread. With its creamy-smooth texture, and a density greater than other cheese spreads, this is a winner for those who crave the real cheese flavour without any lingering tanginess. A favourite dish with this cheese is Italian Polenta with Brazil Nut cheese and pickled beets, no seasoning required, except for some sea salt. One tablespoon Brazil Nut cheese = 3 Brazil Nuts. Seed Cheese Style Spread
Pumpkin Seed Cheese
This is the first of our seed cheese spreads. Like nut cheese spreads, seed-based spreads are easier to digest, and they are even lower in fat. Pumpkin seeds are also super high in Zinc. Other highly nutritious seed cheeses are made with sunflower and sesame seeds, but sunflower seed cheese oxidizes too fast and the top layer gets a darker color. This makes it not as easy to handle commercially. It's also a little bitter and tangy in flavour, but it's highly recommended for people going through detox diets to ensure they get the required daily mineral and vitamin content.
